I got this soup recipe long back from a magazine .. and as i LOVE soups .. i just had to give it a try … and it turned out really delicious that i have been making it alot since .. the tomatoes in it gives it a nice sour taste … its very simple to make and if you want to make it vegetarian you can simply substitute the chicken stock for vegetable stock …so if you like soups like i do .. you got to try this recipe out … to make it you will need:
This Recipe Serves: 4 to 5
- 2 cups Cabbage … chopped
- 1 big tomato … peeled and chopped
- 1 onion (medium size) .. chopped
- 1/2 cup celery .. chopped .. around 1 1/2 sticks
- 1 garlic .. minced … around 1 ts
- 4 cups chicken stockĀ (1 liter)
- 1 tb vegetable oil
- salt and pepper … to taste
PS. I like to cut all the vegetable into the same shape .. it will give it a nicer final look ..

Start by peeling the tomatoes … to peel it … you will need a firm tomato .. don’t use one that’s ripe and soft …
Make an “X” shaped cut on the tomatoes … one on each side .. don’t cut too deep … just enough to cut through the skin ..

Place the tomato in a heat proof dish .. then add enough boiling water to cover it completely …

Keep it in the boiling water for around 3 to 5 mins then take it out and place it in cold water …
The peel will slide right out of it … its that simple
Ps. make sure not to keep the tomatoes for long in the boiling water as you don’t want it to be cooked …

Now for the soup …
Heat the vegetable oil in a pot … then add the onion and stir until it becomes translucent .. around 2 mins

Once the onion become translucent add the celery and cook for another 2 to 3 mins …
Then add the minced garlic and stir until its fragrant … a min or so …

Add the cabbage and cook for around 5 mins … until it just starts to be done … dontĀ cook it all the way …

Then add the stock and bring the mixture to a boil …

Add the tomatoes … i like to cut the tomatoes the same shape as the cabbage (stick shape)

Finally season the soup with salt and pepper … and let it boil until the cabbage is cooked all through …

And thats it … a delicious, simple soup …

This is making me hungry. I love cabbage soup. I use a ham bone to make my stock and also add potatoes, carrots and 2-3 whole allspice (“kubabas”, as my Polish grandma called them). This is really good with some crusty homemade bread.
Oh this looks good. You made something low carb that I won’t have to adapt at all. Yippee. I love cabbage.
