This is one of my favorite ways of making eggs … its real simple and healthy ….Its simply making tomato sauce then adding eggs to it …. to make it u will need:
- 4 meduim ripe tomatoes, chopped
- 2 big cloves garlic , sliced
- 4 large eggs
- 1 tb gee or butter or even oil (which ever u prefare)
- salt and pepper

Start by melting gee or butter .. then add the garlic .. stir until fregrant..

Add the tomatoes ..and stir …

Season with salt and pepper .. this is the first seasoning … dont add alot … u can add more later …

Now cover and let it boil on low for about 10 to 15 mins.. until u feel the sauce is cooked …

Add the eggs .. one at a time .. but make sure that the egg yolks dont break … just as in the photo .. the yolks have to stay whole .. thats the most important thing in this recipe …

Now cover again … and put the heat on low … and cook for nearly 15 mins …. do not stir or the yolks will break .. if u feel u have to stir then do it very gently …cook until the yolks are hard and the eggs are cooked…. taste the sauce and season again if needed …

Serve with bread ….

Could tis be served for breakfast? or is it more of a snack?
Hay Annie … well it can be eaten any time of the day … but as it has alot of garlic i wouldnt recommend it for breakfast
