This recipe was requested by Becky … its the first recipe request … so if anyone else has any other recipe that she/he would like to know …. comment on the recipe request page ….
This is a very popular and tasty dish … its kibbe (meat and bulgur) stuffed with minced meat .. so its meat stuffed with meat
… anyway … its so worth the effort to make it .. its really tasty … to make it you will need:
- 1 tb ghee
- 1 small red onion finely chopped
- 1 lb minced meat
- 1 ts all spice
- salt and pepper
Lets start by making the filling …

Melt the ghee then add the chopped onion …. and stir for a minute or so …

Add the minced meat and stir well until cooked ….

Then add the all spice, salt and pepper … stir well .. and transfer the minced meat to another bowl and let cool completely … if in a hurry .. place it in the fridge for 10 mins or so …

Now we start shaping the kubbe … for that you will need a little oil which will help the kubbe not to stick while shaping .. so simply place a small bowl with a little veg oil …

Oil your hand a little … by a little i literally mean a drop .. if you add a lot then you will get the opposite effect and the kubbe will fall apart …
Now take nearly 1 tb of the kubbe mixture and roll it into a ball …

Using you index finger .. make a whole in the center of the kubbe ball …

Keep gently pressing and rotating the kubbe and making the cavity bigger …

Until the its like the photo …

Then add the filling … around 1 to 2 ts … depending on the size ….

Then gently seal it ….

And you got your first kubbe or kibbe ….
Repeat the same process to make more ….
Note : At this stage you can freeze the kubbe and when ever needed simply take out of the freezer straight to the deep fryer …

Deep fry the kubbe until golden brown in color …

And serve with the desired dip … this time my choice was a dip that we make that is similar to tzatziki .. but a little different too

I’ve never heard of this dish before. It sounds fascinating. I love a dish that has a lot of prepping and requires a lot of time in the kitchen!
Well then you found what you are looking for … this does take alot of prepping but its so worth it … try it and you will know what i mean

These look great,BUT I cant find the bulgar wheat in the recipe!Is the same mixture used for both shell and filling?
Thanx Valerie … the shell only has bulgur in it … the filling is normal minced meat …. but the bulgur is important for the shell as it makes it crisp and doesnt let it fall apart in the frying process … try looking for bulgur in specialty stores … maybe Mediterranean ones .. as they use it in Turkey and Greece too …. let me know if you find it .. and let me know how it turns out
