This is a recipe that my aunt makes … its really simple and is a perfect side dish… the potatoes are boiled then fried … this process is to make sure that the potatoes stay in shape and give it a really nice golden color …. you only need few ingredients to make it …you will need:
- 8 new potatoes (any small potato would do too)
- 1 clove garlic, minced
- 1 tb lemon juice
- 2 tb olive oil
- 2 tb coriander, finely chopped
- salt and pepper

Start by peeling the potatoes (you have to peel them, if you dont then you wont get the golden color ) … then place it in a pan with water and bring it to a boil … dont boil it until its totally cooked … just for 5 to 8 mins … the potatoes will finish cooking while frying …

While the potatoes are boiling … mix the minced garlic and lemon juice … then to it add the olive oil … and mix them all well ….

Then to the mix add the coriander …. then season it with salt and pepper … and set it aside …

After the potatoes have boiled for 5 to 8 mins.. strain it … then deep fry it until its golden in color …

Then place the potatoes in a bowl with a kitchen paper to remove all the excess oil …

Now add the garlic-coriander mixture to the potatoes and mix it all together …

And serve … its a perfect, simple side dish …

This looks delicious. I never thought to par-boil the potatoes and then fry them like that. I bet they’d also be great with some dill!
