I know Waffles are breakfast food .. but for some reason i always have it as a dessert… well im not much of a breakfast person anyway … but i absolutely love this recipe … its very fruity and very flavorful … and quiet easy to make .. all you need is:
- 1 3/4 cup flour
- 1/4 cup coconut
- 1 tb baking powder
- 1/2 ts salt
- 1 cup milk
- 1/2 cup coconut milk
- 2 tb sugar
- 4 oz melted butter … around 8 tb
- 3 eggs
- 250 gms strawberries .. cut into wedges
- 1 to 2 mangoes .. cut into cubes … (mangoes should be nearly the same amount as the strawberries)
- 1 tb sugar … actually depending on the sweetness of the fruit

Start by peeling the mangoes and cutting it into cubes .. then cut the strawberries into wedges too …

Now depending on the sweetness of your fruit add sugar … the strawberries i used weren’t sweet so i added 1 tb sugar to sweeten it a little …

To the strawberries add the mangoes …

Stir everything together .. and set it aside …

Start heating the waffle machine …
In a bowl add all the dry ingredients … so add the flour, coconut, baking powder and salt …

In a measuring cup add all the wet ingredients … milk, coconut milk, eggs, butter and sugar

Now add the wet ingredients to the dry ones …

And mix it all well ..

Start making the waffles by pouring the mixture into the waffle machine ..

Then serve the waffle with a generous amount of the mango strawberry mixture ….
