I learned this recipe from a cousin of mine … its really simple to make .. perfect for leftover chicken … i usually like to make it at parties .. sometimes i use different bread than pitta .. everything in it can be done a day ahead .. and all you got to do is fill the sandwich and serve … to make it you will need:
- 1 cooked chicken .. shredded or diced .. upto you … i usually use my recipe for boiled chicken
- 1 onion .. sliced in half then chopped
- 1 1/2 tb curry powder … taste and see .. add a little more if it needs
- 1 green bell pepper.. sliced
- 1 red bell pepper… sliced
- 1 yellow bell pepper… sliced
- 1 tb ghee or oil or butter … your choice ..
- mustard … optional
- pitta bread

Start by melting the ghee then to it add the onion and saute until translucent …

To the onion add the chicken and mix it well ..

Then add the curry powder … and mix …

Lastly add the bell peppers ….

Mix everything well together .. stir for 3 to 5 mins … then remove from the heat …
At this point you can store the chicken in the fridge until you need to use it … and heat it before making it into sandwiches …

Now take one side of the pitta bread … and place a good amount of the chicken curry mixture …

If you like .. you can add a little mustard … it really gives it a great taste …

Then wrap it … simply roll it up …

And serve with a side of baked potatoes or french fries…

Hey… I made something almost exactly like this last night! I used cumin/coriander and some ajwain seeds instead of curry powder… The chicken and peppers taste so good wrapped up with some spices!
