Hi Heni … im really sorry but i dont know both the recipes .. its the first time i hear of Gallaba .. and when i looked for it .. it turned out to be originally an indian dish .. and about the Maamoul Madd with cheese … i know the regular maamoul .. but was wondering .. did you mean the kinafa that is done with semolina? … if thats what you mean then i might have a recipe for it … let me know

Wa Alaikum Assalam … the minced meat kababs are called kofta’s in arabic .. and i posted the basic recipe of kofta before … you can bake it too with potato and tomato .. or with tahini sauce … and if you want .. you can grill it like the traditional way … or even make it into a burger shape and grill it … Let me know when you get to try it … and stay in touch

My mother in law used to make nice kuskus (which they didn’t call it there, because they use it as vulgar slang), with some kind of tomato sauce. Do you know the recipe for this, esp. the tomato sauce? It was really good.

Hi Anisah … i know what you mean …. the dish you are talking about isnt couscous … couscous is a moccoran dish … the one you are talking about is called Maftool but which one are you exactly looking for …because there is a chicken and a meat one ??

Many, many thanks for the muhammara recipe. Looks amazing, and now I’ve got back from my travels I’m determined to give it a shot. Just as an aside, is there any reason why some Lebanese restaurants have muhammara on their menus and some don’t? I know it’s a Syrian dish originally, but Lebanese cuisine often borrows from the Syrian – I just wondered if there was a cultural reason why you don’t find muhammara at some places?
Thanx James … hope you enjoyed your travels … well about muhammara not being found in many Lebanese restaurants i think there are a couple of reasons for that … firstly muhammara isn’t a very popular dip .. i myself didn’t know it until recently from my sister in law who is Syrian … even when you look in arabic cookbooks you don’t always find it .. its mainly because isn’t not only Syrian but also from Aleppo which is the most influenced with Turkish cuisine due to geographic reasons … and its also due to the nature of the dip as its spicy and can only be eaten with certain food … while something like hummus is actually breakfast food and is eaten anytime and with anything … but i know that the main reason is that … muhammara isn’t really known … and unless the chef in the restaurant is Syrian there isn’t a chance of them even knowing it .. or may even assume that its chilly (there is another sauce that’s commonly used that’s very spicy chilly) … well i hope this answers your question .. if not .. let me know

I have married into a P family and have learned some things but would like to ask – with the bechamel – do you know how to temper in the eggs that many use? And, once, I had a light cumin lemon sauce served with roast chicken, it was raw and garlicky and xtra good – any clues?

Hi Farhan … about the pickles usually they are cucumber, turnip and carrots … sometimes you might find cabbage too .. and the turnip is always or most of the time died with pink color from some beets … the way its pickled im not so sure about … but i will ask about it and will reply by tomm inshallah … if the way is too long i will email it … do stay in touch

About the kibbeh .. i dont think there is any difference in it (if you are talking about the fried kibbeh) the only difference i know is that in Syria they use white bulgur and in other places they use the brown one .. that’s why the color might look different before frying .. but that doesn’t effect the taste … hope this helps .. if it doesnt let me know
About the wara’ enab with dibs el roman .. i never tried making it be4 .. usually i use lemon .. but i use the dibs for stuffed cabbage (Malfoof) … and i know that all you need to do is dilute the dibs with a little hot water .. and add it to it like you would do if you added lemon … its a simple step … sorry i couldnt help more … do let me know if whatever i said didnt explain enough … and stay in touch
