    Hi Laila!

I know this is more of a Ramadan recipe but I’d love to know how you make atayef with cheese and nuts.

    Thank you! :)

  • My mother in law used to make nice kuskus (which they didn’t call it there, because they use it as vulgar slang), with some kind of tomato sauce. Do you know the recipe for this, esp. the tomato sauce? It was really good.

    Thanks!

    Anisah

  • Laila

Hi Nansi … well we usually buy the atayef ready and just fill them up … but i will try to look for a recipe for you …I will email you and let you know … stay in touch :-)

  • Laila

Hi Anisah … i know what you mean …. the dish you are talking about isnt couscous … couscous is a moccoran dish … the one you are talking about is called Maftool but which one are you exactly looking for …because there is a chicken and a meat one ??

  • Hi Laila. Great site! How about a recipe for muhammara? Feel free to check out and comment on my new website – http://www.duguzzle.blogspot.com

  • Laila

Thanx James … i will email you when i post it … stay in touch :-)

  • Many, many thanks for the muhammara recipe. Looks amazing, and now I’ve got back from my travels I’m determined to give it a shot. Just as an aside, is there any reason why some Lebanese restaurants have muhammara on their menus and some don’t? I know it’s a Syrian dish originally, but Lebanese cuisine often borrows from the Syrian – I just wondered if there was a cultural reason why you don’t find muhammara at some places?

  • Laila

Thanx James … hope you enjoyed your travels … well about muhammara not being found in many Lebanese restaurants i think there are a couple of reasons for that … firstly muhammara isn’t a very popular dip .. i myself didn’t know it until recently from my sister in law who is Syrian … even when you look in arabic cookbooks you don’t always find it .. its mainly because isn’t not only Syrian but also from Aleppo which is the most influenced with Turkish cuisine due to geographic reasons … and its also due to the nature of the dip as its spicy and can only be eaten with certain food … while something like hummus is actually breakfast food and is eaten anytime and with anything … but i know that the main reason is that … muhammara isn’t really known … and unless the chef in the restaurant is Syrian there isn’t a chance of them even knowing it .. or may even assume that its chilly (there is another sauce that’s commonly used that’s very spicy chilly) … well i hope this answers your question .. if not .. let me know ;-) … do stay in touch :-)

    ps. sorry for the delay

  • Nansi

Hi Laila! Just wanted to drop you a line and say that I miss you blogging!

  • Dear Laila

Hello, my name is Joseph Stephan and I’m the co-editor of http://shahiya.com/english , a newly launched interactive website focused on Middle Eastern recipes.
I discovered your blog Laila Blog’s a while ago and I have become a big fan of it. It is indeed an inspiration for its readers.

I really like how you capture photos of the ingredients at every step of the recipe preparation. I also like the measurement accuracy in the ingredients for your recipes. And I love the fact that users can request a recipe from you. That shows your dedication and love for what you do.

We are contacting several relevant bloggers to get their opinion on shahiya.com. As I have great respect for your expertise in online publishing of Middle Eastern recipes, I would highly appreciate it if you could visit our website and give us your thoughts on it.

I look forward to hear your opinion of our site.

    Sincerely Yours

    Jazakum,

  • Laila

Thanx Tarena … i already have posted Musakhan .. if you dont want to make it into sandwiches like i did you can simply layer the bread and soak it with a little of “chicken stock/olive oil” mixture … it tastes the same just in a different simpler way … and about Mansaf im sorry but i dont have a recipe for it … but i will try to get one .. and if i do i will make sure to let you know :-) … stay in touch ;-)

  • Eva

    Hi,

Thanks for publishing, your work is beautiful and inspiring. I have married into a P family and have learned some things but would like to ask – with the bechamel – do you know how to temper in the eggs that many use? And, once, I had a light cumin lemon sauce served with roast chicken, it was raw and garlicky and xtra good – any clues?

Great work Laila! I will bookmark this blog :)

  • Laila

Hay Eva … i never really made the bechamel using eggs but i will try to look it up and see how its done and will let you know …
About the sauce served with the roast chicken … do you mean the one served with rice .. as you said its has garlic, olive oil, lemon and some spice??? if that’s the one you mean then let me know because the recipe i have doesn’t have cumin .. it has coriander seed … if you could describe the dish more so i can make sure its the one you mean …. let me know … and stay in touch :-)

  • Hi
I worked in Cairo for a couple of years and I remember a dessert called ‘Om Aly’. It was pastry pieces cooked with milk, eggs and raisins but I can’t remember the exact recipe. Do you have one.
    Thank you
    James Walsh

  • Laila

Hi James … i know the dessert you are talking about … but i dont have a recipe for it … but will try finding one and will email you as soon as i find it … stay in touch :-)

  • Laila

Hi Salam …. what i mean is the canned creams there are many brands available in the market .. the one i used is nestle cream .. but there are other brands also available .. hope you got what i mean .. if not .. do let me know .. and let me know how the recipe turns out too :-) .. stay in touch

  • Masoud

    Hello,

I was wondering if you could make koosa bel bachemel. Thank you!

  • Nurelle

I came across your website and i think you’re amazing! i love the recipes. So far i made Bassima because thats one of my favourite desserts and it turned out quite well and i made Koshary which my family enjoyed ALOT! so i cant wait to try other recipes! Thanks so much :)
    <3

  • Laila

Hay Nurelle … well im glad you are giving the kitchen a try.. it can be fun :-P … and thanx alot for your feedback … do let me know when ever you give any other recipe a try … and stay in touch :-)

  • Salam Laila,

Hope ur having a great Ramadan!

I wanted to ask you, how do you make the pickles that come as a side dish at arabic restaurants? What vegetables are classically used?

    Thanks!

  • Laila

Hi Farhan … about the pickles usually they are cucumber, turnip and carrots … sometimes you might find cabbage too .. and the turnip is always or most of the time died with pink color from some beets … the way its pickled im not so sure about … but i will ask about it and will reply by tomm inshallah … if the way is too long i will email it … do stay in touch :-) ..

    And Ramadan Kareem :-)

  • Nansi

Hi Laila, would love to get a fatteh recipe, one with just chickpeas, and another with lamb shanks?

  • Shereen

    Hi Laila!
    I looove your blog!..
I want to ask you about the difference between the shami kibbeh and the lebanese kibbeh.
And it would be great if you have a recipe for wara’enab that uses dibs al remen?
    THANX!

  • Yasmine

    Hi Laila,

I just came across your blog. I am a convert to islam and my fiance is egyptian so I am delighted you have a blog on middle eastern food I do not know what recipe to ask for because I do not know a lot about middle eastern food but I love desserts, please, please keep up the good work you are doing. I am from Portugal and love cooking too. Happy ramadan to you.

  • Nansi

Laila we miss you blogging where did you disappear!

  • Laila

Hay Nansi … sorry it took me a while to reply but in Ramadan i barely have time .. so you want Fatteh recipes … about the chickpeas one its a specialty of my dads .. he makes the best one ever .. so i will get to it soon inshallah … and about the Lamb one … you mean the one with garlic, and lemon right?? .. just wanna make sure its the one you want … will email you when its posted … thanx a lot for keeping in touch … take care :-)

  • Laila

    Hay Shereen …
About the kibbeh .. i dont think there is any difference in it (if you are talking about the fried kibbeh) the only difference i know is that in Syria they use white bulgur and in other places they use the brown one .. that’s why the color might look different before frying .. but that doesn’t effect the taste … hope this helps .. if it doesnt let me know :-)
About the wara’ enab with dibs el roman .. i never tried making it be4 .. usually i use lemon .. but i use the dibs for stuffed cabbage (Malfoof) … and i know that all you need to do is dilute the dibs with a little hot water .. and add it to it like you would do if you added lemon … its a simple step … sorry i couldnt help more … do let me know if whatever i said didnt explain enough … and stay in touch :-)

ps. sorry for the delay in the reply … and thanx for dropping by and leaving the comment :-)

  • Laila

Hi Yasmine … Thanx alot for dropping by and leaving this lovely comment … i really appreciate it .. and always glad to meet new muslims and new cooks … so hope you are having a great Ramadan and A Happy Eid … take care and stay in touch :-)
